6 medium apples, peeled and thinly sliced (Granny Smith or Honeycrisp recommended)
1/3 cup brown sugar (for apple layer)
1 tbsp flour (for apple layer)
1 tbsp lemon juice
1 cup rolled oats
1/2 cup all-purpose flour (for streusel)
1/3 cup packed brown sugar (for streusel)
1/2 cup cold unsalted butter, cubed
1/2 tsp ground cinnamon (for streusel)


Instructions

Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
For the crust: Mix graham cracker crumbs, 1/4 cup sugar, 1/4 tsp cinnamon, and melted butter until combined. Press the mixture evenly into the pan. Bake for 10 minutes and let cool.
For the filling: In a bowl, beat cream cheese and 1 1/2 cups sugar until smooth. Add eggs one at a time, mixing well after each addition. Incorporate vanilla extract, 1 tsp cinnamon, and nutmeg. Spread the mixture over the cooled crust.
For the apple layer: Sauté apples in 1 tbsp melted butter until tender. Add brown sugar, flour, and lemon juice; mix well. Pour the apple mixture over the cheesecake filling.
For the streusel: Combine oats, flour, 1/3 cup brown sugar, and 1/2 tsp cinnamon in a bowl. Cut in cold butter until the mixture becomes crumbly. Sprinkle evenly over the apple layer.
Bake for 55-60 minutes until the streusel is golden brown and the filling is set. Cool completely before refrigerating for at least 4 hours to firm up. Slice and serve chilled.


Notes

Cheese layer should be slightly underbaked for a creamy texture.
Use a springform pan to prevent cracks during baking.
Replace vanilla extract with non-alcoholic vanilla bean paste for a halal version.
