Ingredients
1 1/2 cups graham cracker crumbs
1/3 cup granulated sugar
6 tablespoons unsalted butter, melted
1/2 teaspoon ground cinnamon
24 ounces cream cheese, softened
1 cup granulated sugar
3 large eggs
1 cup sour cream
1 tablespoon lemon juice
1 teaspoon vanilla extract
2 large apples, thinly sliced
1/2 cup all-purpose flour
1/2 cup rolled oats
1/2 cup brown sugar
1/4 cup unsalted butter, cold and cubed
1/2 teaspoon ground cinnamon
Instructions
Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
Mix graham cracker crumbs, sugar, melted butter, and cinnamon, then press into the pan bottom and bake for 8 minutes. Let cool.
Beat cream cheese and sugar until smooth, then add eggs one at a time, followed by sour cream, lemon juice, and vanilla.
Pour the cheesecake mixture over the prepared crust.
Arrange thin apple slices evenly over the cheesecake filling.
In a small bowl, combine flour, oats, brown sugar, and cinnamon. Cut in cold butter until the mixture is crumbly, then sprinkle over the apples.
Bake for 50-60 minutes until edges are set but center remains slightly jiggly.
Turn off the oven and let the cheesecake sit inside for 1 hour with the door cracked open.
Chill in the refrigerator for at least 4 hours before serving.
Notes
Ensure all dairy ingredients are at room temperature to avoid lumps in the cheesecake batter. The chilling process is crucial for the perfect silky texture. Keep leftovers in an airtight container in the refrigerator for up to 4 days.
