1 unbaked flaky pie crust
1 large egg
1 tablespoon milk
6 cups fresh blueberries
3/4 cup granulated sugar
1/3 cup cornstarch
1 tablespoon fresh lemon zest
1/2 cup packed brown sugar
3/4 cup all-purpose flour
1/2 cup rolled oats
6 tablespoons unsalted butter, chilled and cubed


Instructions

Preheat your oven to 375°F (190°C).
Prepare the filling by tossing the blueberries with granulated sugar, cornstarch, and lemon zest in a large bowl.
Roll out the pie crust and fit it into a 9-inch pie dish, trimming the edges.
Whisk the egg and milk together and brush the edges of the crust.
Pour the blueberry filling into the pie shell.
In a separate bowl, combine flour, brown sugar, and oats for the crumble.
Cut the chilled butter into the crumble mixture until it resembles coarse crumbs.
Sprinkle the crumble mixture evenly over the blueberries.

Notes
