1 1/2 tablespoons granulated sugar
3/4 cup cold salted butter, sliced
1 teaspoon apple cider vinegar
1/2 cup cold water
3 large baking apples, thinly sliced
1 teaspoon ground cinnamon
1 cup granulated sugar (for caramel)
1/2 cup heavy cream, warmed
1/4 cup salted butter, sliced
1/4 teaspoon lemon juice


Instructions

Whisk together flour and sugar in a large bowl.
Cut in the cold butter until the mixture resembles coarse crumbs.
Stir in the apple cider vinegar and enough cold water to form a dough.
Wrap dough and chill in the refrigerator for at least 30 minutes.
Preheat oven to 375°F (190°C).
Roll out the dough into a rough circle on parchment paper.
Arrange sliced apples in the center, leaving a 2-inch border.
Fold the edges of the dough over the apples, pleating as you go.
Bake for 35 to 40 minutes until golden brown.
For the caramel, heat 1 cup sugar and lemon juice in a pan until amber.
Stir in warmed cream and butter until smooth.
Drizzle the finished caramel over the warm galette.


Notes

Keep the butter very cold to ensure a flaky crust. The rustic look is intentional, so do not worry about neat edges. Store any leftovers in an airtight container at room temperature for up to two days.
