Description

1 cup whole milk, lukewarm (110F-115F)
1/4 cup unsalted butter, melted
3 1/4 cups all-purpose flour, plus extra for dusting
1/4 cup granulated sugar
2 1/4 tsp active dry yeast
1/2 tsp salt
1 large egg
2 large apples, peeled and diced
1/2 cup brown sugar, packed
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 cup unsalted butter, softened (for filling)
1/2 cup heavy cream (for drizzling)


Instructions

In a large bowl, whisk lukewarm milk, melted butter, sugar, and yeast until yeast dissolves.
Add egg, salt, and flour, stirring until a soft dough forms.
Knead dough on a floured surface for 5-7 minutes until smooth and elastic, then let it rise in a warm spot for 1 hour.
In a pan, cook diced apples, brown sugar, cinnamon, and nutmeg over medium heat until apples are tender and liquid has caramelized.
Roll out the risen dough into a rectangle and spread with softened butter, then sprinkle with the apple-caramel filling.
Roll the dough into a log and cut into 12 even pieces, placing them into a greased baking dish.
Pour heavy cream over the rolls and let them rise for another 30 minutes.
Preheat oven to 375F (190C) and bake for 20-25 minutes until golden brown.


Notes

Ensure your milk is not too hot to avoid killing the yeast. Using a tart apple variety like Granny Smith works best to contrast the sweetness of the caramel. Store leftovers in an airtight container for up to 2 days.
