2 cups shortbread cookie crumbs
2 tablespoons granulated sugar
4 tablespoons butter, melted
16 ounces whipped cream cheese, softened
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
3 Bartlett pears, peeled, cored, and finely chopped
2 tablespoons caramel sauce
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup rolled oats
1/4 cup brown sugar
3 tablespoons cold butter, cubed


Instructions

Preheat oven to 350°F and grease an 8×8 baking pan.
Combine shortbread crumbs, 2 tablespoons sugar, and melted butter; press into the pan and bake for 10 minutes.
Beat cream cheese, 1/2 cup sugar, egg, and vanilla until smooth; spread over the crust.
Toss the chopped pears with cinnamon, nutmeg, and caramel sauce in a small bowl.
Evenly spoon the pear mixture over the cheesecake layer.
Mix oats, brown sugar, and cold butter until crumbly and sprinkle over the pears.
Bake for 45-50 minutes until the center is set and the topping is golden.
Cool completely at room temperature, then chill in the refrigerator for at least 2 hours before cutting into bars.
