Ingredients
For the Cheesecake Filling:
- 8 oz (225g) cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup whipped topping (or homemade whipped cream)
For the Fruit Salad Mix:
- 1/2 cup diced strawberries
- 1/2 cup blueberries
- 1/2 cup diced kiwi or mango
- 1/2 banana, finely sliced (optional)
- 1/2 tablespoon lemon juice
For the Wraps:
- 4 large flour tortillas or flatbread wraps
Optional Toppings:
- Extra whipped cream
- Fresh mint leaves
- Powdered sugar
- Honey or fruit drizzle
Instructions
1. Beat cream cheese until smooth, then mix in powdered sugar and vanilla until creamy. Fold in whipped topping.
2. Dice all fruit into small pieces and toss banana with lemon juice if using.
3. Spread cheesecake filling over each tortilla, leaving a small border around the edges.
4. Evenly sprinkle fruit over the filling.
5. Roll tortillas tightly into logs and wrap in plastic wrap.
6. Chill for at least 30 minutes to firm up.
7. Slice into 1-inch pinwheels and serve with desired toppings.
Notes
Use soft tortillas to prevent cracking when rolling.
Avoid overfilling to keep rolls intact.
Chilling helps the rolls hold their shape when slicing.
