Ingredients
2 cups all-purpose flour
1 cup vegetable oil
1 cup brown sugar
2 large eggs
1 1/2 cups grated zucchini (not drained)
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 tbsp vanilla extract
1 cup semi-sweet chocolate chips
Instructions
Preheat oven to 350°F (180°C)
Line a 9×5-inch loaf pan with parchment paper
Grate zucchini into a bowl, season with 1/2 tsp salt, and let sit 10 minutes
Squeeze excess moisture from zucchini, reserving most liquid for batter
Whisk flour, sugar, baking soda, cinnamon, and salt in a large bowl
In a separate bowl, mix oil, eggs, zucchini, and vanilla until smooth
Fold chocolate chips into the wet mixture
Pour batter into prepared pan and sprinkle additional chocolate chips on top
Bake for 60 minutes or until a toothpick comes out clean
Cool completely before slicing
Notes
Reserve zucchini moisture to ensure soft texture
Use dark chocolate for a stronger flavor
Freeze slices wrapped in plastic wrap for up to 3 months
Batter can be baked in two 8 1/2×4 1/2-inch pans for two loaves
