Ingredients
2 cups fresh strawberries, hulled and diced small
1 1/2 sleeves Ritz crackers (approx. 48 crackers)
1 cup salted butter
1 cup packed light brown sugar
12 ounces semi-sweet chocolate chips
6 ounces white chocolate chips
Instructions
Preheat your oven to 400 degrees Fahrenheit.
Line a rimmed baking sheet with parchment paper for easy removal.
Arrange the Ritz crackers in a single layer to cover the entire bottom of the baking sheet.
In a saucepan over medium heat, melt the butter and brown sugar together; bring to a boil and cook for 3-4 minutes until thickened.
Pour the hot caramel mixture evenly over the crackers, then bake for 5 minutes until bubbling.
Remove from the oven and immediately sprinkle the semi-sweet chocolate chips over the hot caramel.
Once the chocolate softens, spread it into an even layer with a spatula.
Drizzle with melted white chocolate and top with the diced strawberries while the chocolate is still tacky.
Refrigerate the tray until set, then break into jagged shards to serve.
Notes
Ensure you dice the strawberries very finely to prevent excess moisture from compromising the bark. Store leftovers in an airtight container in the refrigerator for up to 3 days. If you prefer a nuttier flavor, you can sprinkle toasted sliced almonds on top.
