Ingredients
5 ripe peaches, sliced into medium chunks
1/2 cup granulated sugar
5 tbsp brown sugar, packed
2 tsp ground cinnamon
1/2 tsp ground nutmeg
2 tsp pure vanilla extract
3 tbsp all-purpose flour
1 1/2 tubes store-bought cinnamon rolls
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, toss the peach chunks with granulated sugar, brown sugar, cinnamon, nutmeg, vanilla extract, and flour until evenly coated.
Pour the seasoned peach mixture into a large cast-iron skillet or a 9-inch baking dish.
Arrange the cinnamon rolls evenly over the top of the peach mixture.
Bake for 25 to 30 minutes, or until the cinnamon rolls are golden brown and cooked through, and the peach mixture is bubbling.
Remove from the oven and let cool for 5-10 minutes before serving.

You can use fresh or frozen peaches for this recipe. If using frozen, thaw and drain excess liquid first. Feel free to substitute peaches with nectarines or plums. Serve warm, preferably with a scoop of vanilla bean ice cream.
