Description

Tropical, tender cookies with the zing of key lime and toasted coconut, dusted with crackled powdered sugar. A 25-minute treat that’s soft, slightly tart, and irresistibly sweet.


Ingredients

2 cups all-purpose flour
1 cup unsalted butter, softened
3/4 cup granulated sugar
1/2 cup coconut flakes, toasted
2 large egg whites
1 teaspoon key lime zest
1/2 teaspoon key lime juice
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup powdered sugar (for rolling)


Instructions

Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a bowl, combine flour, baking powder, salt, and coconut flakes.
Mix butter and granulated sugar until light and fluffy; beat in egg whites, key lime zest, and juice.
Gradually add dry ingredients to the wet mixture until a dough forms.
Portion dough into 1-tablespoon balls. Roll each in powdered sugar until fully coated.
Place on baking sheets and bake for 8–10 minutes or until edges crackle but centers remain soft.
Let cool on the pan 5 minutes before transferring to a rack.


Notes

For extra crunch, press a little extra powdered sugar into the dough before baking.
Store in an airtight container for up to 5 days.
Substitute regular lime zest if fresh key lime is unavailable.
