Ingredients
2 cups all-purpose flour
1/2 cup white sugar
1/2 cup light brown sugar
2 tablespoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon baking soda
3/4 cup unsalted butter, softened
1 cup old-fashioned oats
2 large apples, peeled and diced
1 egg, beaten
1/2 cup milk
1/4 cup maple syrup (non-alcoholic)
1/4 cup vegan butter (for halal/non-dairy option)
Confectioners’ sugar, for glaze
1 tablespoon melted coconut oil
Instructions
Preheat oven to 375°F (190°C)
Line a 12-cup muffin tin with paper liners
In a bowl, combine 2 cups flour, 1/2 cup white sugar, 1/2 cup brown sugar, 2 tablespoons cinnamon, and 1 teaspoon nutmeg for the crumble base
Mix 1/2 cup butter and 1/2 cup oats until crumbly to form the streusel
In a separate bowl, whisk 1 beaten egg, 1/2 cup milk, and 1/4 cup maple syrup until smooth
Substitute butter with vegan butter if desired
Pour streusel into a small bowl
In the muffin tin, divide 3/4 of the flour mixture among the cups
Top each with apple chunks and streusel
Bake for 20-25 minutes or until golden and a toothpick comes out clean
Let cool slightly, then drizzle with confectioners’ sugar mixed with coconut oil
Notes
For extra flavor, add 1/2 cup chopped walnuts to the streusel
Cool completely before storing to avoid sogginess
