Description

Easy Lemon Icebox Dessert is a cool, creamy no-bake treat with bright lemon flavor and a soft chilled texture.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 8 ounces cream cheese, softened
  • 14 ounces sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 8 ounces whipped topping, thawed
  • Extra whipped topping, optional
  • Lemon zest, optional
  • Graham cracker crumbs, optional
  • Thin lemon slices, optional

Instructions

1. In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar.

2. Press the mixture into the bottom of an 8×8-inch or 9×9-inch dish. Refrigerate while preparing the filling.

3. In a large bowl, beat the softened cream cheese until smooth.

4. Add the sweetened condensed milk, lemon juice, lemon zest, and vanilla extract. Beat until creamy.

5. Gently fold in the whipped topping until fully combined.

6. Spread the lemon filling over the chilled crust. If desired, add a thin layer of extra whipped topping on top before chilling.

7. Cover and refrigerate for at least 4 hours or overnight.

8. Garnish as desired, slice, and serve cold.


Notes

For best results, use room temperature cream cheese and fresh lemon juice.

Chill overnight for cleaner slices and better flavor.
