It avoids complex rolling techniques, relying on simple, quality ingredients to highlight the natural sweetness of peak-season fruit. Perfect for sharing, this dessert offers a wonderful contrast in textures that will leave your kitchen smelling like vanilla and caramelized stone fruit.
Ingredients
1 3/4 cups all-purpose flour
1 tablespoon corn starch
1/2 cup plus 1 tablespoon organic cane sugar
1 1/8 teaspoon baking powder
1/4 teaspoon sea salt
1/2 cup unsalted butter, cubed and cold
1 large egg
1/2 teaspoon vanilla extract
4 cups fresh peaches, peeled and sliced
1 cup fresh blueberries
1 teaspoon lemon zest
1 teaspoon lemon juice
Instructions
Preheat your oven to 375°F and lightly grease a 9-inch springform pan.
In a large bowl, whisk together the flour, cornstarch, sugar, baking powder, and salt.
Add the cold, cubed butter and use your fingers or a pastry cutter to work it into the dry ingredients until the mixture resembles coarse meal.
Stir in the egg and vanilla extract until a soft dough forms; press two-thirds of the dough into the bottom and slightly up the sides of the prepared pan.
In a separate bowl, gently toss the sliced peaches, blueberries, lemon zest, and lemon juice.
Spread the fruit mixture evenly over the base crust.
Crumble the remaining dough over the top of the fruit.
Bake for 45-50 minutes, or until the crust is golden brown and the fruit is bubbling.
Allow the tart to cool completely on a wire rack before removing the sides of the pan to ensure it holds its shape.
Notes
Be sure to use ripe, juicy peaches for the best flavor. If the peaches are exceptionally sweet, you can slightly reduce the sugar in the fruit mixture. Ensure the butter is cold when cutting into the flour to achieve a tender, flaky crust. Let this cool fully to allow the fruit juices to set.
