Ingredients
2 1/4 cups all-purpose flour
1 1/2 cups unsalted butter (cold, cubed)
3/4 cup packed brown sugar
1/2 cup granulated sugar
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking powder
4–5 medium ripe peaches (diced with pits removed)
2 tablespoons cornstarch
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C). Whisk flour, brown sugar, cinnamon, salt, and baking powder in a bowl
Cut cold butter into dry mixture using a pastry cutter or fork until crumbly
Press half the crumb mixture firmly into a greased 9×13-inch baking pan
In a separate bowl, toss diced peaches with cornstarch and vanilla
Spread peaches evenly over base crumb layer
Sprinkle remaining crumb mixture over peaches
Bake 35-40 minutes until top is golden and filling bubbles
Cool completely before cutting into bars
Notes
Use ripe but firm peaches for best texture
Chill butter before mixing for better crumb
Bars keep 2-3 days in airtight container
Vegan adaptation: Substitute melted coconut oil for butter
