Ingredients
5 cups sliced apples (Honeycrisp or Granny Smith)
1/2 cup coconut sugar
1 tablespoon coconut flour
1 1/2 teaspoon pumpkin pie spice
1/4 cup water
1/4 teaspoon ground cinnamon
1 tablespoon melted coconut oil
1 teaspoon raw honey
1/2 cup your favorite granola
Instructions
Preheat your oven to 350F.
In a large bowl, toss the sliced apples with coconut sugar, coconut flour, pumpkin pie spice, ground cinnamon, and water until evenly coated.
Transfer the apple mixture into a heat-safe baking dish.
In a small bowl, combine the granola with the melted coconut oil and raw honey until well coated.
Spread the granola mixture evenly over the top of the apples.
Bake for 30-35 minutes or until the apples are tender and the topping is golden and crunchy.
Remove from the oven and allow it to cool slightly before serving.
Notes
Ensure you use firm apples to prevent them from becoming too mushy during baking. Serve warm, perhaps with a scoop of non-dairy vanilla yogurt or coconut cream for an extra touch of indulgence.
