Ingredients

Scale

10 cups crisp apples (peeled, cored, and sliced)
1/3 cup coconut sugar (for the base)
1 tsp ground cinnamon
1 tbsp white whole wheat flour (to help thicken the fruit juices)
1 cup old-fashioned rolled oats
1 cup white whole wheat flour (for the topping)
1/3 cup coconut sugar (for the crumble)
1/2 cup chopped walnuts or pecans
1/4 tsp baking powder
1/4 tsp baking soda
1 tsp ground cinnamon
1/2 cup melted butter or coconut oil

Instructions

Preheat your oven to 350 degrees Fahrenheit and lightly grease a 9×11 inch baking dish.
In a large bowl, toss the sliced apples with 1/3 cup coconut sugar, 1 tsp cinnamon, and 1 tbsp flour until evenly coated, then spread into the prepared dish.
In a separate mixing bowl, combine the rolled oats, 1 cup white whole wheat flour, 1/3 cup coconut sugar, nuts, baking powder, baking soda, and 1 tsp cinnamon.
Pour the melted butter or coconut oil over the dry topping ingredients and stir until crumbs form.
Evenly sprinkle the oat crumble over the apple mixture.
Bake for 35 to 45 minutes, or until the topping is golden brown and the apple filling is bubbling.
Remove from the oven and let cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving to maintain the best texture. You can serve this with a scoop of frozen yogurt or dairy-free vanilla ice cream.
