2 cups ripe pears, peeled, cored, and diced
1 tablespoon lemon juice
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1 1/2 cups rolled oats
1 1/2 cups all-purpose flour
1 cup brown sugar
1/2 teaspoon salt
3/4 cup unsalted butter, chilled and cubed


Instructions

Preheat your oven to 375°F (190°C) and grease an 8×8-inch baking pan.
In a medium bowl, combine the diced pears, lemon juice, sugar, cinnamon, and vanilla; set aside.
In a large bowl, whisk together the rolled oats, flour, brown sugar, and salt.
Cut the chilled, cubed butter into the oat mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
Press two-thirds of the oat mixture firmly into the bottom of the prepared pan.
Spread the pear filling evenly over the oat base.
Sprinkle the remaining oat mixture over the top, pressing lightly to adhere.

Allow the bars to cool completely in the pan before slicing into squares.
