Ingredients
Crust: 2 cups all-purpose flour
1 cup (227g) butter, softened
3/4 cup granulated sugar
1 tsp ground cinnamon
1/2 tsp ground nutmeg
Filling: 4 large peaches, peeled and chopped
1/2 cup brown sugar
2 tbsp cornstarch
1 tsp vanilla extract
Topping: 1 1/2 cups all-purpose flour
1/2 cup (113g) butter, melted
3/4 cup packed brown sugar
1 cup quick oats
1 tsp ground cinnamon
0.5 tsp ground nutmeg
Instructions
Preheat oven to 350°F (177°C)
Line a 13×9 inch baking pan with parchment paper
In a bowl, mix crust ingredients until crumbly
Press 1/2 the crust mixture into the pan as the base
Set aside remaining crust for topping
In another bowl, mash peaches with fork
Stir in filling ingredients until well combined
Spread over the crust base
Mix topping ingredients until crumbs form
Sprinkle over the peach filling
Bake for 25-30 minutes until golden
Cool completely before slicing into bars

Swap peaches with seasonal fruits like apples or cherries
Use frozen sliced peaches thawed and drained for off-season baking
