Description

A flaky, buttery crust filled with a vibrant blueberry and peach mixture, brightened by lemon zest and balanced with a hint of cinnamon and nutmeg. Ingredients

2 1/4 cups all-purpose flour
1/2 teaspoon salt
1 cup cold butter (soft or cubed, halal approved)
2/3 cup cold water (if needed)
3 cups sliced ripe peaches
4 cups fresh blueberries
1/2 cup granulated sugar
2 tablespoons cornstarch
1 teaspoon lemon zest
2 tablespoons fresh lemon juice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup halal-approved butterscotch chips (optional, for topping)


Instructions

Preheat oven to 375°F (190°C)
In a large bowl, mix flour and salt. Add cold butter, and cut in with a pastry blender until crumbly
Gradually add cold water to form a dough; knead gently 2-3 times
Split dough in half, shape into disks. Chill 30 minutes
Roll out one disk into a 12-inch circle. Transfer to a 9-inch pie dish and trim edges
In a separate bowl, combine peaches, blueberries, sugar, cornstarch, lemon zest, juice, cinnamon, and nutmeg
Pour filling into prepared crust
Dot the surface with small butter pieces
Roll out second dough disk for top crust. Cut into strips for lattice or drape whole
Brush top crust with milk (or halal-approved alternative) and sprinkle butterscotch chips if desired
Bake 45-50 minutes, until golden and bubbly. Cool before slicing


Notes

Use peaches and blueberries at peak ripeness for best flavor
For a vegan version, substitute butter with cold halal-approved plant-based margarine and water for egg wash
Store at room temperature for up to 2 days in a cool place, then refrigerate
