Ingredients
2 cups ripe peaches, chopped (about 3 medium peaches, skin on, diced into ½-inch cubes)
1 ½ cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
¼ teaspoon salt
½ cup vegetable oil
2 large eggs, beaten
1 teaspoon ground cinnamon
1 tablespoon pure vanilla extract
2 tablespoons honey (for topping)
Instructions
Preheat oven to 350°F (175°C)
Line an 8×4-inch loaf pan with parchment paper
In a large bowl, whisk flour, sugar, baking powder, salt, and cinnamon
In another bowl, mix vegetable oil, eggs, and vanilla extract
Add wet ingredients to dry ingredients; stir until just combined
Fold in chopped peaches gently, avoiding overmixing
Transfer batter to prepared loaf pan
In a small bowl, mix 2 tablespoons honey and ½ teaspoon cinnamon; drizzle over batter
Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean
Cool in pan for 10 minutes, then transfer to a wire rack
