Ingredients
1 1/2 cups all-purpose flour
3/4 cup unsalted butter, softened (use halal alternative if preferred)
1 1/2 cups granulated sugar
2 large eggs
2 tablespoons fresh lemon juice
Zest of 2 lemons
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup powdered sugar (for glaze)
1 tablespoon fresh lemon juice (for glaze)
Instructions
Preheat oven to 350°F (180°C)
Line a 9×13-inch baking pan with parchment paper
In a bowl, whisk together flour, cocoa powder, baking powder, and salt
In a separate bowl, cream butter and sugar until smooth
Beat in eggs one at a time, then add lemon juice and zest
Gradually mix dry ingredients into the wet mixture
Spread batter evenly into the prepared pan
Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean
In a small bowl, combine powdered sugar and 1-2 tablespoons lemon juice to make a thick glaze
Drizzle glaze over cooled brownies and top with additional lemon zest
