2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup unsalted butter, softened
1/4 cup granulated sugar
1 cup dark brown sugar, packed
2 large eggs
1 1/2 teaspoons vanilla extract
2 medium apples, peeled and finely chopped
1 tablespoon brown sugar (for apples)
1 tablespoon butter (for apples)
1 cup confectioners’ sugar (for glaze)
2 tablespoons pure maple syrup (for glaze)
1 tablespoon milk (for glaze)


Instructions

Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
In a small skillet, sauté the chopped apples with 1 tablespoon of butter, 1 tablespoon of brown sugar, and a pinch of cinnamon until tender, then set aside to cool.
In a medium bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
In a large mixing bowl, cream the softened butter with both sugars until light and fluffy.
Beat in the eggs one at a time, followed by the vanilla extract.
Gradually add the dry ingredients into the wet mixture until just combined.
Fold in the prepared sautéed apples gently.
Spread the batter evenly into the prepared baking pan.
Bake for 25-30 minutes or until the edges are golden brown and a toothpick comes out mostly clean.
Allow the blondies to cool completely in the pan.
Whisk together the confectioners’ sugar, maple syrup, and milk until smooth, then drizzle over the cooled blondies.


Notes

Ensure you don’t over-mix the batter after adding the flour to keep the blondies chewy. For a more intense maple flavor, you can add 1/2 teaspoon of maple extract to the glaze.
