Ingredients
2 2/3 cups all-purpose flour
2 2/3 tablespoons granulated sugar
1 1/3 teaspoons salt
1 cup plus 3 tablespoons unsalted butter, very cold and cubed
1/2 cup ice water
4 cups apples, peeled, cored, and chopped
1/2 cup granulated sugar
1 tablespoon apple pie spice
1 1/2 tablespoons cornstarch
2 tablespoons unsalted butter, melted
Instructions
In a large bowl, whisk together the flour, sugar, and salt for the pastry.
Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Gradually add the ice water, mixing until the dough just comes together. Form into a disk, wrap, and chill for 30 minutes.
While the dough chills, toss the chopped apples with sugar, apple pie spice, and cornstarch in a bowl.
Preheat your oven to 375°F (190°C).
Roll out the dough on a floured surface and cut circles to fit your mini pie molds.
Press the circles into the molds and fill with the apple mixture.
Top with remaining pastry or decorative strips.
Drizzle with melted butter if desired.
Bake for 25-30 minutes or until the crust is golden brown and the filling is bubbling.
Cool slightly before serving.
