Ingredients
1 1/2 cups graham cracker crumbs
1/2 cup halal butter, softened
1 cup cream cheese, softened
1/2 cup granulated sugar
1/4 tsp salt
2 eggs
1/2 cup evaporated milk
1/2 cup caramel sauce (halal/non-alcoholic)
3 medium apples, thinly sliced
1 tbsp ground cinnamon (divided)
1/2 tsp ground nutmeg
1/2 tsp vanilla extract
1/2 cup rolled oats
1/4 cup brown sugar
1/4 cup halal butter, melted
1 tsp baking powder
Instructions
Preheat oven to 350°F (175°C)
In a bowl, mix graham cracker crumbs and softened halal butter for crust. Press mixture into 12 mini muffin cups.
In another bowl, beat cream cheese, sugar, salt, and eggs until smooth. Fold in evaporated milk and half the caramel sauce.
Pour cheesecake mixture into prepared crusts. Top each with caramel-swirl drizzle.
Arrange sliced apples in a single layer over cheesecakes, seasoning with 1/2 tbsp cinnamon and nutmeg.
In a separate bowl, combine oats, brown sugar, remaining 1/2 tsp cinnamon, melted halal butter, and baking powder. Sprinkle evenly over apples.
Bake for 20 minutes. Cool completely, then refrigerate for at least 2 hours before serving.
