4 large eggs

1/2 cup softened unsalted butter (for filling)
2 cups powdered sugar (for filling)
2 tablespoons heavy cream (for filling)
1 teaspoon peppermint extract (for filling)
2 drops green food coloring (optional)
1 cup semi-sweet chocolate chips (for ganache)
1/2 cup heavy cream (for ganache)


Instructions

Preheat oven to 350°F (175°C) and line a 9×13 inch pan with parchment paper.
Whisk browned butter, sugar, cocoa powder, salt, and vanilla in a large bowl.
Add eggs one at a time, beating well after each, then fold in flour until just combined.
Spread batter into prepared pan and bake for 25-30 minutes; allow to cool completely.
Beat softened butter, powdered sugar, peppermint extract, food coloring, and 2 tablespoons cream until smooth and fluffy.
Spread mint filling over the cooled brownies and chill for 30 minutes.
Heat remaining cream and chocolate chips together until smooth, then pour over the mint layer.
Refrigerate until the ganache is set before slicing into squares.
