Description
An easy and delicious peach bread pudding served with a warm brown sugar sauce.
Ingredients
- 4 cups bread cubes, cut into 1-inch cubes
- 2 cups peaches, peeled and chopped
- 3 large eggs
- 1/2 cup white granulated sugar
- 1/2 cup heavy whipping cream
- 2 cups whole milk
- 1 1/2 teaspoons vanilla extract or vanilla bean paste
- 4 teaspoons white granulated sugar, for topping
- 1/4 cup salted butter
- 1/2 cup light or dark brown sugar, packed
- 1/4 cup heavy whipping cream
- Pinch salt
Instructions
1. Preheat oven to 200°F. Scatter bread cubes on a baking sheet and dry for 10–15 minutes without toasting. Cool completely.
2. Preheat oven to 350°F and grease 4–6 ramekins or one large baking dish. Place on a baking sheet.
3. Combine peaches with cooled bread cubes and divide among the prepared dishes.
4. Whisk together eggs, 1/2 cup sugar, cream, milk, and vanilla.
5. Pour egg mixture over bread and peaches until dishes are about 3/4 full. Let stand 15 minutes. Brush tops with a little egg mixture and sprinkle with sugar.
6. Bake for 35–45 minutes until golden and set. Tent with foil if browning too quickly.
7. Let stand 10 minutes before serving.
8. For the sauce, melt butter in a saucepan. Add brown sugar, cream, and salt. Bring to a boil, stirring regularly, then cook a few minutes more.
9. Remove sauce from heat and serve warm over the bread pudding.
Notes
Brioche, challah, French, or Italian bread work well.
Day-old bread is ideal, but fresh bread can be dried a little longer in the oven.
Serve warm with warm brown sugar sauce.
Refrigerate leftovers and reheat before serving.
