Description

Decadent peach crumb bars with a buttery oat crust, juicy peach filling, and golden crumble topping. A no-fuss alternative to traditional pies, perfect for summer desserts or gatherings.


Ingredients

1 ½ cups all-purpose flour
1 teaspoon ground cinnamon
1 cup packed light brown sugar
½ cup cold unsalted butter, cubed
1 cup old-fashioned rolled oats
1 cup cornstarch
45 medium ripe peaches, peeled and sliced
2 tablespoons cornstarch
1 tablespoon lemon juice
Pinch of salt


Instructions

Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
In a bowl, combine 1 ½ cups flour, cinnamon, ½ cup brown sugar, and ½ cup cornstarch. Cut in cold butter until crumbly. Press half the mixture into the pan as the crust.
In a separate bowl, toss sliced peaches with 2 tablespoons cornstarch, lemon juice, ¼ cup brown sugar, and salt. Spread over crust.
Mix remaining flour, oats, ¼ cup brown sugar, and ¼ cup butter into a crumbly texture. Sprinkle over peaches.
Bake 35–40 minutes until golden. Cool completely before cutting into bars.


Notes

For a gluten-free version, substitute certified gluten-free oat flour and cornstarch.
Store in an airtight container at room temperature for up to 3 days.
Serve with whipped cream or a scoop of vanilla ice cream for extra indulgence.
