Ingredients
1 1/2 cups all-purpose flour (for crust)
3/4 cup rolled oats
1/2 cup brown sugar (for crust)
1/2 tsp cinnamon (crust)
1/4 tsp baking powder
1/4 cup butter, melted
1 cup pears, diced
3/4 cup cream cheese, softened
3/4 cup sugar
1 egg
1 tsp vanilla extract
1/2 tsp lemon zest
1/4 tsp nutmeg
2 tbsp flour (filling)
1 cup butter, softened (topping)
1/2 cup brown sugar (topping)
1/2 tsp cinnamon (topping)
1/4 cup oats (topping)
Instructions
Preheat oven to 350°F (175°C)
Combine 1 1/2 cups flour, 3/4 cup oats, 1/2 cup brown sugar, cinnamon, and baking powder in a bowl
Mix in 1/4 cup melted butter until crumbly
Press half the mixture into a lined 9×13-inch pan and bake for 12 minutes
Cool briefly and press the remaining crust into another layer on top of the base
In a separate bowl, mix cream cheese, sugar, egg, vanilla, lemon zest, nutmeg, and 2 tbsp flour
Spread the filling evenly over the top crust layer
In another bowl, combine 1/2 cup brown sugar, 1 cup butter, 1/2 tsp cinnamon, and 1/4 cup oats for the topping
Sprinkle the topping over the filling
Bake for 25 minutes until golden and set
Cool completely in pan before cutting into bars
Notes
Use ripe but firm pears for best texture
Chill the filled crust for 10 minutes in the fridge before adding the topping
Ensure butter is at room temperature for even mixing
Store in an airtight container at room temperature for 3-4 days
