Description
Soft, chewy bars with warm pumpkin flavor and pockets of melted chocolate. A fall favorite baked in one pan for easy sharing, combining the best of pumpkin pie and chocolate chip cookies.
Ingredients
2 cups all-purpose flour
1 cup (2 sticks) unsalted butter, softened
1 cup light brown sugar
1/2 cup granulated sugar
1/2 cup canned pumpkin puree (100% pure)
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon salt
2 cups semisweet chocolate chips
Instructions
Preheat oven to 350°F (180°C)
Line a 13×9-inch baking pan with parchment paper
In a medium bowl, whisk flour, baking soda, cinnamon, nutmeg, ginger, allspice, and salt
In a large bowl, cream butter and both sugars until light and fluffy
Beat in eggs one at a time, then stir in pumpkin puree and vanilla
Gradually add dry ingredients to wet ingredients until just combined
Fold in chocolate chips
Spread dough evenly in prepared pan
Bake 25-30 minutes until center is firm
Cool completely before cutting into bars
Notes
Use high-quality pumpkin puree with no added sugar for best flavor
Butter should be softened (not melted) for proper texture
Store in an airtight container at room temperature up to 3 days
Bars can be frozen up to 2 months
