1.5 cups all-purpose flour
1.5 cups old-fashioned rolled oats
0.5 teaspoon coarse sea salt
0.5 teaspoon baking soda
0.75 cup unsalted butter, melted
0.5 cup light brown sugar
2 teaspoons vanilla extract
1.5 cups pumpkin puree, blotted
0.5 cup granulated sugar
1 large egg
1 teaspoon ground cinnamon
0.25 teaspoon ground nutmeg


Instructions

Preheat your oven to 350°F and grease an 8×8 inch baking pan.
In a large bowl, whisk together the flour, oats, salt, and baking soda.
Stir in the melted butter, brown sugar, and vanilla until a crumbly dough forms.
Reserve about one third of the mixture for the topping and press the remaining amount firmly into the prepared pan.
In a separate bowl, whisk together the pumpkin puree, granulated sugar, egg, cinnamon, and nutmeg until smooth.
Pour the pumpkin mixture over the oat base and spread evenly.
Sprinkle the reserved oat mixture over the top.
Bake for 30-35 minutes until the edges are golden brown.
Allow to cool completely at room temperature, then chill in the refrigerator to set before slicing.


Notes

Ensure your pumpkin puree is blotted to remove excess moisture for a better set. You can store these bars in an airtight container in the refrigerator for up to 5 days. For a vegan option, substitute the egg with 2 tablespoons of ground flax-seed mixed with 3 tablespoons of water.
