3/4 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
1 cup pumpkin puree
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 teaspoon salt
3 cups old-fashioned rolled oats
1/2 cup unsalted butter, softened (for filling)
2 cups powdered sugar (for filling)
2 tablespoons maple syrup (for filling)
1/2 teaspoon ground cinnamon (for filling)


Instructions

Preheat your oven to 350°F and line two baking sheets with parchment paper.
In a large bowl, cream together 3/4 cup softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the pumpkin puree and vanilla extract.
In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Fold in the rolled oats.
Drop rounded tablespoons of dough onto prepared baking sheets and bake for 12-14 minutes until set.
Allow cookies to cool completely on a wire rack.
To make the filling, beat the remaining butter, powdered sugar, maple syrup, and cinnamon until smooth and fluffy.
Spread a generous spoonful of buttercream on the flat side of one cookie and sandwich it with another.


Notes

Store the cookies in an airtight container in the refrigerator for up to 5 days. For crispier edges, do not over-bake; the cookies should still be soft to the touch when removed from the oven.
