Description

These Pumpkin Pie Pecan Bars are a rustic, comforting autumn treat that simplifies the classic holiday dessert. Featuring a buttery, oat-filled crust that doubles as a crunchy streusel topping, they sandwich a velvety, spiced pumpkin custard center. 2 cups old-fashioned rolled oats
1 1/2 cups all-purpose flour
1 cup brown sugar
3/4 cup cold unsalted butter, cubed
1 teaspoon baking powder
1/2 teaspoon salt
1 can (15 oz) pumpkin puree
2 large eggs
1/2 cup maple syrup
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup chopped pecans


Instructions

Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a medium bowl, combine the oats, flour, brown sugar, baking powder, and salt.
Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Press two-thirds of the oat mixture firmly into the bottom of the prepared pan and bake for 10 minutes.
In a separate bowl, whisk together the pumpkin puree, eggs, maple syrup, cinnamon, ginger, and cloves until smooth.
Pour the pumpkin mixture evenly over the partially baked crust.
Combine the chopped pecans with the remaining one-third of the oat mixture and sprinkle over the top of the pumpkin layer.
Bake for 25-30 minutes or until the center is set.
Allow the bars to cool completely in the pan before slicing into squares.


Notes

Ensure your butter is cold when mixing with dry ingredients to achieve a crumbly, textured topping. For extra crunch, toast your pecans in a dry skillet for 2-3 minutes before adding them to the topping mix. Store these bars in an airtight container in the refrigerator for up to 5 days to maintain the freshness of the pumpkin custard.
