Description

These soft, chewy Pumpkin Spice Cookies are the ultimate cozy autumn treat. Packed with the warm, earthy notes of classic fall spices and the creamy sweetness of white chocolate chips, they offer a perfect balance of texture and flavor. Designed to be foolproof and quick, this recipe requires no chilling time, making it ideal for busy weeknights or spontaneous weekend cravings. You will love how these bakery-quality cookies fill your home with the nostalgic, aromatic scent of the season.

Ingredients

Scale

1 cup unsalted butter, softened
1 cup light brown sugar, packed
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon pumpkin pie spice
1 cup white chocolate chips
1/2 cup pumpkin spice-flavored chips

Instructions

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate medium bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Fold in the white chocolate chips and pumpkin spice-flavored chips.
Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10 to 12 minutes, or until the edges are just set and the centers remain soft.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Ensure your butter is at room temperature for the best texture. Store cooled cookies in an airtight container at room temperature for up to 5 days to keep them soft and chewy. You can substitute the pumpkin spice chips with extra white chocolate or butterscotch chips if necessary.
