Ingredients
1 can (15 oz) pumpkin puree
2 cups all-purpose flour
1 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon pumpkin spice
4 medium eggs
0.75 cup vegetable oil
0.25 teaspoon salt
1 cup whole milk
1 can (12 oz) evaporated milk
1 cup sweetened condensed milk
2 cups heavy whipping cream
0.25 cup powdered sugar
0.5 teaspoon vanilla extract
0.5 teaspoon ground cinnamon
Fresh orange zest
Instructions
Preheat your oven to 350°F and grease a 9×13-inch pan.
Whisk together flour, baking powder, baking soda, cinnamon, pumpkin spice, and salt in a large bowl.
In a separate bowl, beat the eggs and brown sugar until smooth, then whisk in the pumpkin puree and vegetable oil.
Combine the wet and dry ingredients until just incorporated.
Pour the batter into the greased pan and bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
While the cake is warm, whisk together the whole milk, evaporated milk, and condensed milk.
Poke holes all over the warm cake with a fork and slowly pour the milk mixture over the top.
Allow the cake to cool completely, then refrigerate for at least 4 hours or overnight.
Before serving, whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
Spread the whipped cream over the cake and garnish with extra cinnamon and fresh orange zest.
Notes
The cake gets better the longer it sits in the refrigerator, making it the perfect make-ahead dessert. Always ensure the cake is fully cooled before applying the whipped cream topping to prevent melting.
