Description

Raspberry Cheesecake Crumble Bars combine a buttery graham cracker crust, creamy cheesecake filling, and sweet-tart raspberry topping for an irresistible dessert perfect for any occasion.


Ingredients

  • 1½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1½ cups fresh raspberries
  • 1 large egg
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1/4 teaspoon cornstarch
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

2. In a bowl, combine graham cracker crumbs, melted butter, sugar, cinnamon, and salt.

3. Press three-quarters of the crumb mixture into the bottom of the prepared pan to form the crust.

4. In another bowl, beat the cream cheese, sugar, egg, and vanilla extract until smooth and creamy.

5. Spread the cheesecake mixture evenly over the crust.

6. In a saucepan over medium heat, cook the raspberries with sugar, cornstarch, and lemon juice for 5 to 7 minutes until slightly thickened.

7. Spoon the raspberry mixture evenly over the cheesecake layer.

8. Sprinkle the remaining crumb mixture over the top to create the crumble topping.

9. Bake for 30 to 35 minutes or until the bars are set and lightly golden.

10. Allow the bars to cool completely in the pan, then refrigerate for at least 2 hours before slicing and serving.


Notes

For clean slices, chill the bars thoroughly before cutting.

Fresh raspberries provide the best flavor, but frozen raspberries may also be used.

Garnish with additional fresh raspberries before serving for an elegant presentation.
