Description

These elegant bars combine a buttery shortbread crust with a tangy cream cheese filling and vibrant raspberry swirl. Perfect for any occasion, offering a balance of sweet, tart, and creamy textures.


Ingredients

Scale

1 cup all-purpose flour
1/2 cup (1 stick) butter, softened
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
8 oz cream cheese, softened
1/4 cup powdered sugar
1 tablespoon lemon juice
1/2 cup raspberry puree (fresh or frozen raspberries blended)
1/4 cup powdered sugar(glaze)
1 tablespoon raspberry juice or lemon juice


Instructions

Preheat oven to 350°F (175°C)
Mix flour, granulated sugar, and vanilla into softened butter to form a dough
Press dough evenly into a 9×9 inch baking pan
Bake crust for 15-18 minutes until golden
In a bowl, beat cream cheese until smooth
Fold in powdered sugar and lemon juice
Spread over cooled crust
Swirl raspberry puree into cream cheese layer
Chill for 1 hour
Mix powder sugar and raspberry juice for glaze
Drizzle over chilled bars
Allow to set for 30 minutes before cutting


Notes

Use frozen raspberries blended with a little water for puree
Adjust sweetness based on raspberry tartness
Chill completely before cutting for clean slices
Store in airtight container in fridge up to 3 days
