This recipe features a silky, velvety custard seasoned with warming cinnamon and vanilla, set inside a perfectly flaky, buttery crust. By roasting the sweet potatoes rather than boiling them, you unlock a deeper, richer flavor profile that highlights the natural sweetness of the tuber. It is a soul-warming, nostalgic dessert that serves as the perfect centerpiece for holiday gatherings or any occasion needing a touch of homemade comfort.
Ingredients
2 ½ cups all-purpose flour
1 ¼ teaspoon kosher salt
8 tablespoon unsalted butter, cold and cubed
½ cup vegetable shortening, chilled
½ cup ice water
6 medium sweet potatoes
1 stick unsalted butter, softened
1 cup light brown sugar, packed
2 large eggs, room temperature
1 tablespoon vanilla extract
2 teaspoon ground cinnamon
1 teaspoon ground nutmeg
Instructions
Preheat your oven to 400°F and bake the sweet potatoes until fork-tender, then set aside to cool, peel, and mash.
Whisk flour and salt together, then cut in the cold butter and shortening until crumbly.
Add ice water slowly, mixing until dough forms, then wrap and refrigerate for 30 minutes.
Roll out the dough and place into a 9-inch pie dish; crimp the edges.
In a large bowl, beat the softened butter and brown sugar until smooth.
Add eggs, vanilla, cinnamon, and nutmeg to the mixture.
Fold in the mashed sweet potatoes until smooth and creamy.
Pour the filling into the prepared pie crust.
Bake at 350°F for 45-50 minutes or until the center is set.
Allow the pie to cool completely on a wire rack before serving.
Notes
Ensure your butter and shortening are well-chilled to guarantee a flaky crust. Roasting the potatoes provides a better texture than boiling. The pie stores beautifully in the refrigerator for up to 3 days. Served chilled or at room temperature.
