Ingredients
4 medium apples, peeled and diced
3/4 cup plus 1 tablespoon butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon

Instructions
Place diced apples in a small saucepan over medium heat to cook down into a soft puree, then set aside to cool.
Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
