  • 1/3 cup granulated sugar
  • 2 cups freshly diced strawberries
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt

For the Crumble Topping:

  • 3/4 cup all-purpose flour
  • 1/4 cup light brown sugar, packed
  • 1/4 teaspoon kosher salt
  • 5 tablespoons unsalted butter, melted

Instructions

1. Preheat the oven to 350°F and line a 9×9-inch baking dish with parchment paper.

2. In a bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until combined, then press the mixture firmly into the prepared baking dish to form the crust.

3. Beat the cream cheese, eggs, granulated sugar, vanilla extract, and kosher salt until smooth and creamy.

4. Spread the cheesecake filling evenly over the crust.

5. Scatter the diced strawberries evenly over the cheesecake layer.

6. In a separate bowl, mix the flour, brown sugar, kosher salt, and melted butter until crumbly, then sprinkle the crumble topping over the strawberries.

7. Bake for 35 to 40 minutes, or until the bars are set.

8. Cool completely, then chill in the refrigerator for at least 1 hour before slicing into bars.
