2 tablespoons granulated sugar
1/4 teaspoon salt
1/2 cup cold unsalted butter, cubed
1/4 cup ice-cold water
2 cups fresh strawberries, hulled and sliced
2 fresh peaches, pitted and sliced
1/4 cup granulated sugar for the filling
1 tablespoon cornstarch
1 egg, beaten for egg wash
1 tablespoon coarse sugar for sprinkling


Instructions

In a large bowl, whisk together flour, 2 tablespoons sugar, and salt.
Cut in the cold, cubed butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Gradually add ice-cold water, mixing until the dough just comes together into a disk.
Wrap the dough in plastic and refrigerate for at least 30 minutes.
Preheat oven to 375°F (190°C).
In a bowl, toss the sliced strawberries and peaches with 1/4 cup sugar and cornstarch.
On a floured surface, roll the chilled dough into a rough 12-inch circle.
Transfer the dough to a parchment-lined baking sheet.
Arrange the fruit in the center of the dough, leaving a 2-inch border.
Fold the edges of the dough over the fruit, pleating as needed.
Brush the crust with the beaten egg and sprinkle with coarse sugar.
Bake for 35-40 minutes until the crust is golden brown and the filling is bubbling.


Notes

Ensure the butter is kept extremely cold to guarantee a flaky crust. You can prepare the dough up to 2 days in advance and keep it chilled. Serve warm with vanilla ice cream.
