Ingredients
1 package vanilla sandwich cookies, divided
8 tablespoons unsalted butter, melted and divided
3 ounces strawberry flavored gelatin powder
2 cups vanilla ice cream, slightly softened
6 cups strawberry ice cream, slightly softened
1 bottle (11.75 ounces) strawberry ice cream topping
8 ounces frozen whipped topping, thawed
Instructions
Crush half of the vanilla cookies into fine crumbs and mix with 4 tablespoons of melted butter and half the strawberry gelatin powder.
Press the cookie mixture firmly into the bottom of a prepared freezer-safe springform pan to create the base.
Spread the 2 cups of softened vanilla ice cream in an even layer over the crust and freeze for 30 minutes until set.
In a bowl, combine the remaining cookie crumbs with the remaining butter, gelatin, and strawberry topping.
Spread this strawberry-cookie mixture over the vanilla layer.
Spread the strawberry ice cream over the strawberry layer and smooth the top.
Cover and freeze for at least 6 hours or until completely firm.
Top with the thawed whipped topping before serving.
