Description

A creamy, layered strawberry dessert featuring a buttery sugar cookie crust, sweet strawberry cream cheese filling, vanilla pudding, whipped topping, and fresh strawberries.

Ingredients

Scale
  • 1 pouch (17.5 oz) Betty Crockerâ„¢ Sugar Cookie Mix
  • Butter and egg called for on cookie mix pouch for drop cookies
  • 1/3 cup butter, melted
  • 1 container (7.5 oz) strawberry cream cheese spread, softened
  • 1 cup powdered sugar
  • 1/2 cup strawberry jam
  • 1 container (12 oz) Cool Whip frozen whipped topping, thawed
  • 2 boxes (4-serving size each) Jell-Oâ„¢ vanilla-flavor instant pudding and pie filling mix
  • 3 cups cold milk
  • 1 cup chopped fresh strawberries (about 6 oz)

Instructions

1. Heat oven to 375°F. Prepare and bake the sugar cookie mix as drop cookies according to the package directions. Cool completely, at least 20 minutes. Reserve 4 cookies for garnish.

2. Process half of the remaining cookies into coarse crumbs in a food processor. Transfer to a bowl, repeat with the remaining cookies, then stir in the melted butter until evenly combined.

3. Press the cookie crumb mixture firmly into the bottom of an ungreased 13×9-inch (3-quart) glass baking dish to form the crust.

4. In a large bowl, beat the strawberry cream cheese spread, powdered sugar, and strawberry jam until smooth, scraping the bowl as needed. Fold or beat in 2 cups of the whipped topping, then spread evenly over the crust.

5. In a separate bowl, whisk together the instant pudding mixes and cold milk for about 2 minutes until thickened. Spread over the cream cheese layer.

6. Spoon the remaining whipped topping over the pudding layer and spread evenly. Cover and refrigerate for at least 4 hours.

7. Before serving, crumble the reserved cookies and sprinkle over the top along with the chopped fresh strawberries. Cut into 24 squares (6 rows by 4 rows) and refrigerate any leftovers.

Notes

To soften the cream cheese spread quickly, microwave it on a plate for about 15 seconds or until just softened.

Strawberry jam works best because it has a smooth texture that blends easily into the filling.

For the best texture and clean slices, chill the dessert for the full 4 hours before serving.
