These Strawberry Shortcake Streusel Bars are a delicious, handheld dessert that combines the flavors of a classic strawberry shortcake with a buttery streusel. Ideal for summer or any casual get-together, these bars offer a perfect mix of sweet, juicy strawberries and a crumbly, sweet topping. A portable treat you won’t be able to resist.
Ingredients
2 cups all-purpose flour
1 cup chilled butter, cubed
3/4 cup granulated sugar
1 cup brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups sliced fresh strawberries
2 tablespoons lemon juice
Confectioners’ sugar, for dusting
Instructions
Preheat oven to 375°F (190°C). Line a 9×13-inch baking pan with parchment paper.
In a large bowl, combine all-purpose flour, granulated sugar, 1/2 cup brown sugar, cinnamon, and salt.
Add cubed butter and use your fingers or a pastry blender to mix until the mixture resembles coarse crumbs.
Press the crust mixture evenly into the bottom of the prepared pan. Bake for 15 minutes, or until lightly golden.
Meanwhile, in a bowl, toss strawberries with lemon juice. Spread the strawberries evenly over the warm crust.
In a separate bowl, mix 1/2 cup brown sugar, 1/2 teaspoon cinnamon, and 1 cup flour to form the streusel topping. Distribute the streusel over the strawberries.
Return the pan to the oven and bake for 25–30 minutes, or until the streusel is golden and the filling is bubbling.
Let cool completely before cutting into bars and dusting with confectioners’ sugar.
Notes
Use fresh, ripe strawberries for the best flavor. You can prepare the crust ahead of time and store in the refrigerator for up to 1 day before adding the filling.
For a vegan version, substitute the butter with a cold vegan butter alternative and ensure other ingredients are vegan.
