Description
A no-bake summer dessert featuring layers of ladyfingers soaked in strawberry puree, rich mascarpone cream, and fresh berries. Creamy, fruity, and perfect for warm-weather gatherings.
Ingredients
24 ladyfingers
2 cups heavy whipping cream
1 cup mascarpone cheese
8 ounces cream cheese, softened
1/2 cup granulated sugar
2 tablespoons strawberry puree
1 tablespoon vanilla extract
4 ripe strawberries, sliced
1 packet (3.4 oz) strawberry instant pudding mix (non-dairy compliant)
Chocolate shavings (optional, for garnish)
Instructions
Prepare strawberry puree by pureeing 1 cup chopped strawberries with 1 tbsp sugar; simmer until thickened.
In a bowl, combine mascarpone, cream cheese, and 1 cup of chilled whipping cream sweetened with 1/4 cup sugar and 1 tbsp vanilla. Fold in 2 tbsp strawberry puree and the contents of the pudding mix package.
Quickly dip each ladyfinger into remaining strawberry puree (not soaking, just coating) and layer in a dish. Spread a cream layer over the ladyfingers.
Repeat layers, finishing with a top layer of cream. Garnish with sliced strawberries and refrigerate at least 4 hours.
Serve chilled with additional berries if desired.
Notes
Use ladyfingers at room temperature for easier layering
Substitute chocolate shavings with thawed blackberries for a vegan option
Stir 1/2 cup chilled whipping cream (unflavored) into the bottom layer to firm up the texture before assembling
