1/2 cup granulated sugar
1/8 teaspoon salt
7 tablespoons plus 1 teaspoon cold butter, cut into small cubes
2 large egg yolks, lightly whisked
4 large fresh peaches, peeled, pitted, and sliced into 1/2-inch wedges
1/3 cup granulated sugar
3 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon fresh lemon juice
1/2 cup all-purpose flour
1/4 cup packed light brown sugar
1/4 cup cold butter, cut into small pieces


Instructions

Pulse 1 1/3 cups flour, 1/2 cup sugar, and salt in a food processor.
Add the cold cubed butter and pulse until the mixture resembles coarse meal.
Add the egg yolks and pulse until the dough just starts to come together.
Press the dough into a tart pan, ensuring an even layer across the bottom and sides.
Refrigerate the tart shell for 30 minutes to firm up.
Preheat oven to 375°F (190°C).
In a large bowl, toss the peach slices with 1/3 cup sugar, 3 tablespoons flour, cinnamon, and lemon juice.
Arrange the peach mixture over the chilled tart base.
In a separate bowl, mix 1/2 cup flour and 1/4 cup brown sugar.
Cut in the remaining cold butter until crumbly and sprinkle evenly over the peaches.
Bake for 35 to 40 minutes or until the streusel is golden brown and the fruit is bubbling.
Let cool before serving.
