2/3 cup unsweetened non-dairy milk
1/3 cup vegetable oil
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup organic granulated sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/2 cup vegan chocolate chips


Instructions

Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
In a large bowl, whisk together the pumpkin puree, non-dairy milk, vegetable oil, and vanilla extract until smooth.
In a separate bowl, sift together the flour, sugar, baking powder, baking soda, cinnamon, ginger, and nutmeg.
Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
Fold in the vegan chocolate chips.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Ensure your pumpkin puree is not pre-spiced pie filling. You can substitute soy milk with almond or oat milk. Store in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. For best results, do not overmix the batter once the flour is added.
