A golden, buttery crust layered with tender peaches and a crunchy cinnamon streusel topping. These no-fuss bars are perfect for summer, potlucks, or cozy home baking, blending juicy fruit with warm spices and buttery textures.
Ingredients
2 cups all-purpose flour
1 cup (2 sticks) unsalted butter, chilled and cubed
3/4 cup granulated sugar
1/2 tsp salt
2 cups peeled and sliced peeled peaches (fresh, canned, or frozen)
1 tbsp lemon juice
1/2 tsp non-alcoholic vanilla extract
1/4 cup granulated sugar (for peaches)
3/4 cup all-purpose flour (for streusel)
1/2 cup granulated sugar (for streusel)
1 1/2 tsp ground cinnamon (for streusel)
2 tbsp cold unsalted butter (for streusel)
Instructions
Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
In a bowl, combine 2 cups flour, 3/4 cup sugar, and 1/2 tsp salt. Cut in chilled butter until crumbly. Press half the mixture into the prepared pan.
For peaches, toss with lemon juice, 1/4 cup sugar, and vanilla extract. Spread over crust. Evenly scatter remaining crust mixture over peaches.
For streusel, combine flour, 1/2 cup sugar, cinnamon, and 2 tbsp cold butter. Sprinkle over peaches.
Bake for 40-45 minutes, until golden and bubbly. Cool completely before slicing into 24 bars.
Notes
Use canned/frozen peaches with juice, drained. Streusel can be made ahead. Store in an airtight container for up to 3 days.
Substitute non-alcoholic vanilla extract to adhere to dietary restrictions.
