Ingredients
1 1/2 cups graham cracker crumbs
6 tablespoons unsalted butter, melted
1/4 cup granulated sugar
16 ounces cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup pumpkin puree
1/4 cup brown sugar
1 teaspoon pumpkin pie spice
1 cup whipped topping, thawed
Instructions
Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
Mix graham cracker crumbs, melted butter, and sugar, then press firmly into the bottom of the pan and bake for 8 minutes; let cool.
In a large bowl, beat cream cheese and sugar until smooth; beat in eggs and vanilla.
Pour cheesecake mixture over the crust and bake for 20-25 minutes until the edges are set but the center has a slight wobble.
Allow to cool completely and refrigerate for 2 hours.
Whisk together pumpkin puree, brown sugar, and pumpkin pie spice; gently fold in whipped topping.
Spread the pumpkin mixture over the chilled cheesecake layer and chill for an additional 2 hours before slicing into bars.
Notes
Ensure all ingredients are at room temperature to avoid lumps in the cheesecake layer. Use full-fat cream cheese for the best texture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
