Ingredients
4–5 ripe peaches (about 6 cups sliced)
1/2 cup brown sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 cups rolled oats
1/2 cup all-purpose flour
1/2 cup (1 stick) softened butter
1/2 teaspoon vanilla extract
1/2 cup chopped walnuts (optional)
Instructions
Preheat oven to 375°F (190°C)
Line an 8×8-inch baking dish with parchment paper
In a large bowl, toss sliced peaches with brown sugar, flour, cinnamon, and salt
Transfer peaches to baking dish
In another bowl, mix rolled oats, flour, butter until crumbly
Stir in vanilla extract
Sprinkle topping over peaches
Bake 25-30 minutes until top is golden and filling bubbles
Cool slightly before serving warm
Notes
Use frozen peaches if fresh are unavailable (add 5 minutes to baking time)
For vegan version, substitute non-dairy butter
Store leftovers covered at room temperature up to 2 days
